Instapot Spinach Dal
This spinach dal is quick and comforting and the perfect thing for when you don’t know what to make.
Servings: 2
Ingredients:
- 2 tsp oil 
- ½ tsp cumin seeds 
- Pinch of asafoetida 
- 1 tsp minced garlic 
- ½ tsp chili powder 
- ¼ tsp turmeric 
- ½ tsp salt 
- 1 tomato, diced 
- ½ cup masoor, rinsed 
- 2 cups water 
- 1 big handful of spinach, chopped 
Directions:
- Turn instant pot onto saute mode and add oil 
- Add cumin seeds, asafoetida, garlic, chili powder, turmeric and salt 
- Mix well then add tomatoes and saute for 1-2 minutes 
- Add rinsed masoor dal and 1 cup of water 
- Pressure cook on high for 10 minutes. Let pressure release for 10 minutes then manually release remaining pressure 
- Remove the lid from the instant pot and add 1 more cup of water and chopped spinach 
- Mix well and let sit for 3-4 minutes for spinach to soften 
- Serve hot and enjoy!
