Lemongrass Chai
It took me years to finally master a cup of chai as good as my mom’s and the key is lemongrass. It’s a non-negotiable for me and really takes a hot cup of masala chai to the next level.
Servings: 2
Ingredients:
- 2½ cups water 
- ½ tsp chai masala (can be found at an Indian grocery store) 
- 1 tbsp sugar (can do more or less depending on how sweet you want it) 
- 2 stalks of lemongrass (including the leaf and stem), cut into 1 inch pieces 
- 1½ cup whole milk 
Directions:
- Add all the ingredients except milk to a pot and bring to a boil 
- Once the tea is boiling let it continue to boil for a few minutes 
- Add the milk and let that come to a boil 
- Once the tea is at a rolling boil when it gets to the point of almost spilling over, quickly turn down the heat for around 1 minute 
- Turn the heat back up again and repeat letting the tea come to a rolling boil and turning down the heat another 2-3 times 
- Strain the tea into your mug and enjoy! 
Notes:
- The measurement provided is if you are using 12 oz. mugs. For different sized mugs the rule of thumb is use ¾ mug of water and ½ mug of milk for each cup you’re making. The rest of the measurements can remain the same 
- This whole process does take time and is not an instant 5 minute chai recipe but I promise it’s worth it!
