Spiced Sweet Potatoes with Whipped Feta
These are really two side dishes in one that make for a great addition to any meal!
Servings: 6
Ingredients:
- 3 sweet potatoes, cut into circular slices 
- ½ cup olive oil 
- ½ tsp chili powder (1 tsp if you want a kick) 
- 2 tsp salt 
- 1 tbsp garlic powder 
- 2 tsp cinnamon 
- 1 tsp paprika 
- 8 oz crumbled feta 
- ½ cup Greek yogurt 
- 1 tsp salt 
- 1 tsp pepper 
- 2 tsp cold water 
Directions:
- Preheat oven to 400 degrees 
- Add the sliced sweet potato to a large mixing bowl 
- Drizzle on ¼ cup of olive oil and add spices 
- Mix well until the potatoes are evenly coated 
- Place on a parchment paper lined baking sheet and bake for 20 minutes, then flip and bake for another 25 minutes 
- While potatoes are baking start making feta dip by putting feta, greek yogurt, salt, pepper and water into a food processor 
- Slowly add in remaining ¼ cup of olive oil and blend until the dip is smooth 
- Let cool in the fridge until potatoes are done baking 
- To assemble, spread the feta dip onto a tray 
- Once potatoes have cool arrange them on top of the dip
