Tandoori Caramelized Onion Pinwheels
I’ve been obsessed with caramelized onions lately and this is one of my favorite ways to use them!
Servings: ~15
Ingredients:
- 2 onions, thinly sliced 
- 4 tbsp oil 
- 2 tsp garlic powder 
- 1 tsp chili powder 
- 1 tsp garam masala 
- ½ tsp salt 
- 1 tsp cumin powder 
- 1 tsp coriander powder 
- 1 tsp ginger powder 
- Pinch of turmeric 
- 1 sheet of puff pastry dough 
- 2 cups shredded mozzarella 
Directions:
- Heat a pan on medium heat and add 2 tbsp of olive oil 
- Add sliced onion and cook down for 30 minutes, stirring often - add spices 20 minutes in 
- If needed, add a splash of water to unstick the onions from the pan 
- Preheat oven to 400 degrees Fahrenheit 
- Remove from the heat and let the onions completely cool 
- Roll out the pull pastry sheet 
- Spread the caramelized onions onto the sheet 
- Sprinkle with shredded cheese 
- Roll into a log and using a sharp knife cut into even pieces (~½ inch thick) 
- Place each slices onto a parchment lined baking sheet 
- Bake for 20 minutes
