Crispy Quinoa Kale Apple Salad
This is one of my favorite salads - it has a great blend of textures and flavors!
Servings: 6
Ingredients:
Dressing:
- ¼ cup olive oil 
- 1 tbsp dijon mustard 
- 1½ tsp garlic powder 
- 1 tsp onion powder 
- ½ tsp salt 
- ½ tsp pepper 
- 1 tbsp hot honey 
- 1 tbsp maple syrup 
- 1 tbsp rice vinegar 
Salad:
- 2 cups cooked quinoa 
- 1 honey crisp apple, thinly sliced 
- 1 cup of chopped walnuts 
- 3 tbsp butter 
- 3 tbsp brown sugar 
- Chopped kale (~4-5 large handfuls, stems removed) 
Directions:
- Add the ingredients for the dressing to a bowl and mix together 
- Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper 
- Add the cooked quinoa onto the baking sheet and drizzle some olive oil (~2-3 tbsp) and add salt and pepper (eyeball this) 
- Spread the quinoa out onto the baking sheet and bake for 25 minutes 
- To make the candied walnuts add butter and walnuts to a small pan and cook for 2-3 minutes 
- Add brown sugar and continue coating until everything is melted and walnuts are fully coated 
- Spread the walnuts out onto a piece of parchment paper and let cool 
- Add 4-5 large handfuls of chopped kale to a mixing bowl and remove stems 
- Drizzle with olive oil and massage the kale for 1 minute 
- Assemble the salad by adding the sliced apples, walnuts, crispy quinoa and dressing 
- Toss everything together and enjoy!
