Gujarati Thiki Puri
Thiki puri is basically a better version of plain puri - more spice and more flavor and I personally love pairing it with some chai.
Servings: 70-75 puris
Ingredients:
- 4 cups wheat flour 
- 1 tbsp salt 
- 1¼ tsp turmeric 
- 2 tsp chili powder 
- 1 tbsp ajwain seeds 
- 1 tsp cumin powder 
- ⅓ cup oil + 1 tsp oil 
- 1½ cup warm water 
Directions:
- If you have a stand mixer put all the dry ingredients and ⅓ cup oil into the mixing bowl and mix together 
- If not, use a large mixing bowl and mix with a wooden or silicone spoon 
- Gradually add in water 
- Keep mixing until it forms a firm dough 
- Drizzle with a little oil (about 1 tsp) to smooth out the dough 
- Form ~1 inch balls and roll out into a small puri (can also use a press if you have one) 
- Heat a frying pot with oil on medium heat 
- Once oil is hot add 1-2 puris at a time into the oil and fry on each side 
- Continue dunking the puri to ensure it’s covered in oil and puffs up 
- Remove from the oil and place on a plate with a paper towel to absorb excess oil 
- Serve hot and enjoy!
