Egg Burji
This is my mom’s egg burji recipe. It’s spicy and savory and super easy to make!
Servings: 2-3
Ingredients:
- 3 tomatoes, diced 
- ½ large onion, diced 
- 6 eggs, beaten 
- 1 tsp chili powder 
- ½ tsp salt 
- ½ tsp turmeric powder 
- 1 tbsp minced garlic (or 6 cloves minced) 
- ⅓ cup chopped cilantro 
Directions:
- Heat a pan to medium heat and add oil 
- Start by sauteing diced onions for 3-4 minutes or until translucent 
- Add in diced tomatoes and cook for 5-6 minutes until tomatoes have softened 
- Add in chili powder, salt, turmeric powder and garlic and mix well 
- Add beaten eggs to the mixture 
- Continue mixing until liquid has reduced and eggs become crumbly in texture 
- Mix in chopped cilantro
