Rava Dosa
This batter only takes 30 minutes to make and makes the crispiest, most delicious rava dosas!
Inspired by Venkatesh Bhatt’s recipe
Servings: ~20 dosas
Ingredients:
- 1¼ cup semolina 
- 1 cup wheat flour 
- 1 cup rice flour 
- 5 cups water 
- 1¼ tsp salt 
- 1¼ tsp sugar 
- 1 tsp minced green chili (or 1 green chili, minced) 
- 1 tsp minced ginger 
- oil 
Directions:
- Mix 1 cup semolina, wheat flour and rice flour (reserve ¼ cup semolina for later) 
- Add salt, sugar, green chili, ginger and 4 cups of water and whisk together 
- Let sit for 30 minutes 
- After 30 minutes, add 1 more cup of water and ¼ cup semolina and whisk together 
- Heat large flat pan to medium heat (I use a non-stick pan) 
- Fill a small cup or ladle with batter and quickly pour out dosa batter onto hot pan in a circular motion 
- Drizzle the edges with oil 
- Let the dosa get crispy for a few minutes 
- Optional - flip dosa to cook the other side for about 1 minute 
- Fold in half and serve hot with chutney or podi (powder) 
- Enjoy! 
*Note: You’ll have to keep stirring the batter between dosas so it doesn’t separate/thicken
