Vegetable Stir Fry Noodles
These addictive noodles are perfectly garlicky and spicy and will leave you wanting more (and they’re vegan!).
Servings: 4
Ingredients:
- 2 cups assorted frozen vegetables (I use the stir fry pack from Costco) 
- 2 tbsp light soy sauce 
- 1 tbsp dark soy sauce 
- 3 tsp sugar 
- 2 tsp hot sesame oil 
- 1 tbsp minced garlic (or 6 cloves minced) 
- 1 tbsp minced ginger 
- 1 tsp minced green chilies (or 2 minced green chilies) 
- ⅓ cup noodle water 
- 1 package uncooked lo mein noodles (I like Twin Marquis brand) 
- Optional: ⅓ cup chopped cilantro 
- Optional: sesame seeds for garnish 
Directions:
- Prepare the sauce by mixing light and dark soy sauce, sugar, sesame oil, ginger, garlic and green chilies and set aside 
- Heat a pan to medium heat and add oil 
- Add frozen vegetables and cook for 4-5 minutes until vegetables are cooked through but not soggy 
- While vegetables are cooking, boil water for the noodles 
- Cook the noodles according to the package 
- Reserve noodle water and strain the rest 
- Add noodle water to the sauce 
- Once noodles are cooked, add noodles into the pan with vegetables and mix in the sauce 
- Toss well to combine over high heat for 1-2 minutes 
- Optional: add in cilantro and garnish with sesame seeds
