Vegan Broccoli Soy Curls
This is my vegan version of ‘broccoli beef’ which ironically, I’ve never had, but would guess tastes something like this!
Servings: 4
Ingredients:
- 2 cups (or 4 oz. weighed out on food scale) dry soy curls (Butler Foods brand) 
- ⅓ cup corn starch 
- ½ cup vegetable broth 
- 3 tbsp light soy sauce 
- 2 tsp dark soy sauce 
- 2 tbsp vegetarian oyster sauce 
- 1 tsp minced garlic (or 2 cloves, minced) 
- 1 tsp minced ginger 
- 1 medium head of broccoli, cut into florets 
Directions:
- Soak soy curls in hot water for 20 minutes 
- Squeeze the water out of the soy curls and let cool 
- Once cooled, add corn starch and toss together 
- Heat a pan on medium heat and add 2 tbsp of oil 
- Pan fry the soy curls until crispy for about 10 minutes 
- Remove soy curls from the pan 
- Add broccoli to the pan with water, cover and let steam for 3 minutes 
- Once broccoli has steamed, remove and set aside 
- In the same pan, prepare the sauce by mixing vegetable broth, dark and light soy sauce, ginger, garlic, sugar, vegetarian oyster sauce and crushed red pepper 
- Let sauce come to a simmer and add broccoli and soy curls into the sauce 
- Toss together until broccoli and soy curls are covered in sauce 
- Serve hot with rice or quinoa and enjoy!
