Peanut Tofu
This is a one-pot meal that’s flavorful and nutritious and perfect for an easy weeknight dinner!
Servings: 4
Ingredients:
- 1 block of tofu, pressed and cubed 
- 1 small head of broccoli, cut into florets 
- 1 carrot, sliced diagonally 
- ½ medium onion, sliced 
- 1 bell pepper, cubed 
- 1 jalapeño, sliced 
- 2 cups tomato sauce 
- 4 tbsp peanut butter 
- 1 tsp minced garlic (or 2 cloves, minced) 
- 1 tsp minced ginger 
- ½ tsp salt 
- 1 tsp chili powder 
- ½ tsp turmeric 
- 1 tsp coriander powder 
- ½ tsp black pepper 
- 1 tsp sugar 
- 1 tsp lemon juice 
- Optional: ½ cup of chopped cilantro 
Directions:
- Heat a pan to medium heat and add oil 
- Pan-fry (or air-fry) tofu until golden and crispy on all sides 
- Remove tofu from pan and add vegetables to the pan 
- Sauté vegetables for 3-4 minutes 
- Add in tomato sauce, peanut butter, ginger, garlic, lemon juice and spices 
- Cook for another 3-4 minutes 
- Add in tofu and mix well 
- Top with cilantro 
- Enjoy with a side of rice or quinoa!
