Walnut Cauliflower Tacos
This delicious filling is not just great in tacos, you can add it to quesadillas, burritos, bowls and more!
Servings: 12-15 tacos
Ingredients:
- 1 small head of cauliflower, cut into pieces 
- 2 cups chopped walnuts 
- ½ onion, finely chopped 
- 4 tbsp soy sauce 
- 2 tbsp garlic powder 
- 1 tbsp onion powder 
- 1 tbsp chili powder 
- 1 tbsp cumin powder 
- ½ tsp pepper 
- ½ tsp salt 
Taco Assembly:
- Tortillas 
- Shredded lettuce 
- Sour cream 
- Sliced jalapeños 
Directions:
- Add the walnuts and cauliflower into a food processor and pulse until minced 
- Heat a pan on medium heat and add 2 tbsp of oil 
- Saute the onion until translucent then add in the walnut cauliflower mixture 
- Add the soy sauce and spices and cook down for 8-10 minutes 
- Once the mixture is toasted and cooked through, remove from heat and assemble your tacos
