Tortellini Soup
This tortellini soup is quick, filling and a great way to use up any veggies!
Servings: 5-6
Ingredients:
- ½ small onion, finely diced 
- 2 carrots, finely diced 
- 2 celery stalks, finely diced 
- ½ small head of broccoli, finely chopped 
- ½ bell pepper, finely diced 
- 1 tbsp minced garlic (or 6 cloves garlic) 
- 14.5 oz. can crushed tomatoes 
- 5 cups water + 2 tsp vegetable bouillon paste (or 5 cups of vegetable broth) 
- 1 can white beans, drained and rinsed 
- 3 cups uncooked cheese tortellini (I get mine from Costco) 
Directions:
- Heat a pan on medium heat and add 2 tbsp of oil 
- Add all veggies and cook down for 8-10 minutes 
- Add crushed tomatoes and broth and bring to a simmer 
- Add white beans and tortellini and let simmer for 4-5 minutes 
- Optional: sprinkle with crushed red pepper 
- Serve hot and enjoy!
