Sundried Tomato Pesto
This sundried tomato pesto is a great spread on everything: pizzas, sandwiches, wraps and more!
Servings: 1½ cups of pesto
Ingredients:
- ½ cup chopped walnuts 
- ¾ cup sundried tomato (drained oil) 
- 1 tsp minced garlic (or 2 cloves) 
- ½ cup parmesan 
- 1 tbsp crushed red pepper 
- 1 tsp sugar 
- ½ cup chopped basil 
- 2 tbsp sundried tomato oil 
- 2 tbsp olive oil (i like to use a jalapeno infused olive oil) 
- Pinch of salt 
Directions:
- Add everything except oil into a food processor 
- Start pulsing together and slowly add in sundried tomato oil and olive oil 
- Pulse until you reach desired consistency 
- Store in an airtight container
