South Indian Spinach Dal (Keerai Kootu)
This is my mother in law’s spinach dal (keerai kootu) recipe that I adapted into an Instant Pot recipe - so quick and easy!
Servings: 3
Ingredients:
1 + 2½ cups water
¾ cup grated coconut
1 tsp chili powder
1 tbsp cumin seeds (jeera)
1 tsp salt
½ cup moong dal
⅛ tsp turmeric
10 oz bag of spinach
Directions:
Blend together 1 cup of water, coconut, chili powder and cumin seeds until almost smooth
Add the mixture to an instant pot along with the rest of the ingredients
Mix together and close the lid
Pressure cook on high for 20 minutes
Let it vent naturally or manually vent after 5-10 minutes
Use an immersion blender to blend the dal to desired consistency (I like it kind of smooth)
Serve with rice or quinoa and enjoy!
