Vegan Shawarma
This vegan shawarma is so flavorful and perfect in pita wraps or over a salad!
Servings: 6
Ingredients:
Marinade
- 4 cups (or 8 oz. weighed out on food scale) dry soy curls (Butler Foods brand) 
- ½ cup soy curl water 
- 2 tbsp olive oil 
- 2 tsp garlic powder 
- 2 tsp onion powder 
- 2 tsp cumin powder 
- 2 tsp oregano 
- 2 tsp coriander powder 
- 1 ½ tsp chili powder 
- ½ tsp ‘better than bouillon’ (vegetable base) paste 
- ½ tsp salt 
- ½ tsp chili crisp 
- 1 tbsp soy sauce 
Wrap assembly:
- Greek pita flatbread 
- Hummus 
- Tzatziki (use plant based version if making this vegan) 
- Diced tomatoes and cucumber 
- Sriracha 
Directions:
- Soak soy curls in a large bowl for 10 minutes 
- Strain out water from the soy curls and set aside ½ cup of soaked water 
- Squeeze out excess water from the soy curls 
- In a large mixing bowl, add soy curl water, olive oil, spices, chili oil and soy sauce and whisk together 
- Add in soy curls and coat evenly in marinade 
- Let soy curls marinate in the fridge for 30 minutes 
- Spread soy curls evenly onto a baking sheet 
- Bake at 425 degrees Fahrenheit for 20 minutes 
- Assemble wraps by spreading hummus and tzatziki onto warmed pita wrap 
- Add soy curls, tomatoes, cucumber and any other toppings you want 
- Drizzle with sriracha and enjoy!
