Instant Pot Pav Bhaji
This pav bhaji recipe is so easy and delicious and always hits the spot for those Indian street food cravings!
Servings: 5-6
Ingredients:
- 2 tbsp oil 
- 1 tsp cumin (jeera) seeds 
- 2 medium onions, finely diced 
- 3 russet potatoes, peeled and finely diced 
- 1 lb bag frozen mixed vegetables (peas, carrots, corn, green beans mixture), defrosted 
- 1 tbsp minced ginger 
- 1 tbsp minced garlic 
- 2 tsp salt 
- 1 tsp chili powder 
- 1 tsp coriander powder 
- ½ tsp turmeric powder 
- 1½ cup + ¼ cup tomato sauce 
- 1½ cup water 
- 1½ tbsp pav bhaji masala 
Directions:
- Turn Instant Pot onto saute mode and add oil and let heat up 
- Once oil is hot add all ingredients except tomato sauce, water and pav bhaji masala 
- Cook the vegetables and spices for 3-5 minutes 
- Add 1½ cup tomato sauce and 1½ cup water 
- Mix well and add lid to the Instant Pot 
- Cancel saute mode and pressure cook on high for 20 minutes 
- Once cooking is done and naturally vented, open lid and blend with an immersion blender until you reach desired chunkiness 
- Add remaining ¼ cup tomato sauce and pav bhaji masala and mix well 
- Serve hot, topped with finely chopped onions, cilantro and a squeeze of lemon juice with toasted buttery buns or pav bread
