Khaman
Khaman, similar to dhokla, is a delicious and nutritious snack that everyone will love!
Servings: 6
Ingredients:
Khaman Batter:
- 1 cups chana dal (split gram dal) 
- ¼ cup regular or Greek yogurt 
- 3 tbsp oil 
- 1 tsp minced ginger 
- 1 tsp minced green chilies 
- 1 tsp salt 
- ¼ tsp turmeric powder 
- Pinch of citric acid 
- 2 tbsp chickpea flour 
- ¾ cup water 
- 1 tsp Eno 
Tempering/Vaghar:
- 4 tbsp oil 
- 1 heaping tsp mustard seeds 
- 1 heaping tsp sesame seeds 
Directions:
- Soak 1 cup of chana dal in hot water for 3-4 hours 
- Drain the soaked chana dal and add to a blender or food processor with the remaining khaman batter ingredients except the Eno 
- Blend until there are no chunks of chana dal and batter feels smooth (it will still look grainy) 
- Cover the batter and let rest for 4-6 ohurs 
- Once the batter has set add the Eno and 1 tbsp of water and mix quickly until well combined 
- Pour the batter into a greased steel pan (~9.5 inches diameter) 
- Place into a steam pot and steam for 20 minutes 
- Once the khaman is done steaming remove it from the steam pot and let it cool for 10 minutes 
- While it’s cooling, prepare the tempering by adding oil to a small pan on medium heat 
- First add the mustard seeds and once it starts bubbling add the sesame seeds 
- Let the tempering bubble for about 30 seconds then remove from heat 
- Cut the khaman into diamond shaped pieces (or whatever preferred shape you want) 
- Drizzle on the tempering and enjoy!
