Cilantro Chutney
Cilantro chutney is so quick and easy to make and adds a fresh kick to any meal.
Servings: ¾ cup
Ingredients:
- 1 bunch of cilantro, roughly chopped 
- 1 tsp minced garlic 
- 1 tsp minced ginger 
- 3 tbsp crushed peanuts 
- 1 serrano chili (this will make it pretty spicy so start with half for less spice and add more as needed) 
- ½ tsp salt 
- 3 tsp lemon juice 
- 4-6 tbsp water (start with 4 and add more as you blend if needed) 
Directions:
- Add all the ingredients into a handheld blender cup (I use a magic bullet) 
- Blend for 30 seconds at a time until everything is blended smoothly together 
- Taste and adjust salt and spice if needed
