Buffalo Cauliflower
This makes for a great party appetizer or pairs well in tacos, salads and wraps!
Servings: 6
Ingredients:
- 1 medium head of cauliflower, cut into florets 
- ¾ cup flour 
- ¼ cup corn starch 
- 1 cup water 
- 2 cups panko breadcrumbs 
- 2 cups buffalo sauce 
- 4 tbsp butter (or vegan butter) 
Directions:
- Preheat oven to 450 degrees Farenheit 
- Prepare batter by mixing flour, corn starch and water and whisk together 
- Coat the florets in the batter then coat with panko and place on a baking sheet 
- Repeat with the rest of the cauliflower 
- Bake for 25 minutes 
- Meanwhile, prepare sauce by mixing buffalo sauce and butter (i usually just microwave it) 
- Remove cauliflower from oven and coat the florets in sauce 
- Serve with ranch or any choice of dipping sauce 
- Enjoy! 
Optional: place the florets back in the oven after coating in sauce for another 5-8 minutes to let sauce soak in
